PJ Library Recipe of the Month: Apple Pancake Dippers

The High Holidays are coming! Rosh Hashanah begins the evening of Sunday, September 29, and as we inch closer to the year 5780 and the month of Tishrei, we anticipate the sounds of the shofar and the taste of apples and honey.

Why apples and honey?

Like many Jewish holidays, there are traditions that extend to the food that we eat to celebrate. Challah, which is normally braided, is replaced during Rosh Hashanah with a round loaf that symbolizes the circle of life. Dipping apples in honey is also a traditional way of ushering in a sweet new year. The roundness of the apple invokes the same idea of the circle of life. And as we dip the sweet apple into honey, we are putting empahsis on the sweetness of the year to come (not to mention the biblical description of Israel being a land flowing with milk and honey).

While dipping apples in honey is traditional, we love this idea of dipping apple pancakes in syrup. That sounds sticky and delicious. Is there a better way to start the new year?
